Looking for something to eat that is fast, flavorful, and fun to eat?  Hungry Gene's Falafel fits the bill and it's healthy for you too!

Chickpeas, also known as garbanzo beans, are the star of this particular falafel recipe.  Falafel can also be made from fava or a combination of fava beans and chickpeas.  This recipe requires dry chickpeas.  You can use fresh chickpeas, but they need to be hulled.  Fresh chickpeas are a little more brittle and the finished product falls apart quickly.  Canned chickpeas may be convenient, but they are loaded with sodium and your falafel will be mushy.  For this reason, you should absolutely use dry chickpeas.  You will need to prepare the chickpeas the day before because dry chickpeas are uncooked and must soak for at least 24 hours before you use them.

Instead of frying in vegetable oil, consider using an air fryer. Frying in an air fryer can help to cut back on some calories, making this already health dish just a little healthier!

Directions

Step 1:

Soak chickpeas in water for at least 24 hours, then drain and rinse them. You'll have about 4 1/2 cups.

Step 2:

Place all ingredients in a food processor. Process until the consistency of couscous, or coarse corn meal. You may want to do this in batches, so it will process evenly. Mix well so ingredients get fully incorporated. Refrigerate for an hour.

Step 3:

Heat oil for frying to 375F. Form the Falafel. Use 2 tbsp of the mixture to form a ball of a patty (your preference). If the falafel won't stay together, add a bit more flour.

Step 4:

Fry the falafel. Test oil by adding just one first. Fry the falafel balls (or patties) in batches, 4-5 at a time. Fry for a few minutes, until golden brown. Remove from oil with tongs or a slotted spoon. Drain on paper towel.

Alternative: if using an air fryer, spray the basket with some nonstick oil, add as many balls (or patties) into the basket as you can without them touching and spray them very lightly with your cooking oil spray.  Air fry the falafel at 350F for 8 minutes.  Flip and fry for another 6 minutes on the second side.  Repeat until you have cooked all the falafel.

 

Step 5:

Serve with hummus or in a pita as a falafel sandwich with Tahini Sauce.  See below for recipe.

Ingredients

Tahini Sauce Recipe

Ingredients:

  • 1/2 cup tahini

  • 3 cloves garlic, roughly chopped

  • 1/2 tsp salt (Hungry Gene recommends Kosher Salt but any salt will do)

  • 2 tbsp olive oil

  • 1/4 cup lemon juice

  • 1 tbsp Hungry Gene Parsley

Ingredients:

  • Falafel (see recipe above)

  • 6 pita breads

Mediterranean Salad Mix

Step 1:

In a food processor combine tahini, garlic, and salt and process until smooth.  Add olive oil, lemon juice, and parsley and continue to process until smooth. Set aside.

Step 2:

In a bowl, combine tomatoes, cucumber, red onion, parsley, garlic, and dried spearmint together. Mix well and add 1 tbs olive oil and 1 tbs lemon juice. Mix well again and set aside.

Step 3:

Assemble sandwiches. Fill pitas with falafel, Mediterranean salad mix, and pickles. Top with tahini sauce. Serve and enjoy!!!
