When Hungry Gene thinks of BBQ,  he thinks about Deep South BBQ.  This blend is very flavorful -  a bit of a sweet in addition to subtle heat.  It is wonderful on all types of meat including beef, pork, and chicken.  Select your meat, score it and rub it with this seasoning blend.  Scoring allows the flavor penetrate and saturate the meat.  Hungry Gene recommends using 1 tablespoon of dry rub per pound of meat. Be sure to coat both sides and then wash your hands thoroughly. Place the rubbed meat in a resealable bag (like a  large zip lock bag) and then place in the refrigerator for at least two hours. For best results, Hungry Gene recommends keeping it in the fridge for 24 hours before cooking. Then cook it low and slow to bring out the flavor.

And if you want to use the rub to become a sauce just mix in 2 tablespoons of the rub into 1 ½ cup ketchup. It's delicious!
