Marjoram is a little sharp, slightly sweet and minty with notes of citrus. It is closely related to basil, lavender, mint, oregano, rosemary, sage, savory and thyme. It comes to us originally from northern Africa and southwest Asia Minor (modern day Turkey) and has been used in cooking for centuries.
In the U.S. it is a key ingredient in Italian sausage links, pizza sauce and turkey stuffing. It can be used to flavor fish, lamb and pork. It is popular in Greek cooking for grilled lamb and meats and to complement onions, garlic, and wine. Marjoram can compliment clam chowder, eggplant, salads, salad dressings, butter-based sauces, fish sauces, mushroom sauces, tomato-based sauces, soups, and vinegar. It enhances the flavor of vegetables including cauliflower, peas, spinach and tomatoes.
Marjoram works really well in combination with basil, bay, black pepper, chili powder, cumin, garlic, paprika, parsley, rosemary and juniper. Because of that, it is included in many of Hungry Gene's seasoning blends such as Gyro Seasoning, Herbs de Provence, Lamb Rub, and Poultry Seasoning.
