Whole organic yellow mustard seeds have no noticeable aroma, but once you grind them they are a bit pungent. Cooking whole mustard seeds in hot oil releases an acrid, earthy aroma. In India, mustard seeds are cooked in hot oil before they are added to chutneys, curries, and sauces. Whole mustard seed adds flavor to grilled and roasted beef, cabbage, green beans, strong cheeses, chicken, curries, dals, fish, and seafood, cold meats, rabbit, sausages and barbecue rubs. They are also used for pickling and are in Hungry Gene's Salt Free Pickling Spice.
